About this recipe

I’m sharing with you our approach to pasta – the simple macaroni in a garlic yogurt sauce known in the Middle East as Macaroni Bel Laban.

Only 3 ingredients are required. This unusual pasta dish is seriously yummy and it’ll feed your kids in under 15 minutes. This is the go-to recipe when you don’t feel like cooking, but it’s still homemade food.

Ingredients

Main Ingredients

  • 250g pasta (shell)
  • 500g natural yogurt
  • 1-2 cloves garlic
  • salt to season

Optional

  • 1 tablespoon ghee/butter
  • 1 tablespoon pine nuts

Notes from Rouba

  • Bigger size pasta doesn’t do this dish justice.
  • The pasta must be warm before being tossed with yogurt (highly recommend).
  • Adding butter & pine nuts is optional.
  • Once the pasta is tossed with the yogurt, it’s best to serve straight away.

Method

Step 1.

Boil the pasta until soft (softer than al dente). Drain.

Step 2.

Whilst the pasta is cooking, prepare the yogurt by mixing yogurt, crushed garlic & salt. Toss warm pasta with the prepared garlic yogurt sauce.

Step 3.

This step is optional. Heat 1 tablespoon of ghee or butter, add 1 tablespoon of pine nuts and toss until golden in colour. Pour it on top of the pasta.

I Say NO to international women’s day - I have learned so much in the past few months, and as I sit here reflecting, I realize that International Women’s Day has never been as inclusive as I once believed. How was I convinced otherwise? Where is the support for all women? Today, I see the humiliation of Palestinian women, their trauma, their screams for lost loved ones, their search for their babies under rubble, and their lack of basic necessities like food, water and  sanitary products. 

I can no longer participate in a day that acknowledges and hears only certain women while ignoring others. International Women’s Day was supposed to be for all women – this is what I was led to believe. Yet, the reality is starkly different. 

Today, I choose to say no to International Women’s Day unless it truly includes and represents all women.
