About this recipe

Arabian spicy nut rice is a popular accompaniment to all kinds of roastsbarbecues, and family gatherings. Enjoyed by young and old, this dish is easy to make and looks so impressive that your guests will think you’ve spent hours making it.

I love that the Arabian spicy nut rice is enjoyed by most children and there’s no need to cook up a separate dish for them. It also makes a great school lunch for the next day.

This recipe is my mother-in-law’s signature dish. She makes it so well that her guests seem to want more and more. If you prefer a vegetarian option, you must try my chickpea and eggplant rice.

Serve this Arabian nut rice with a super herb salad, natural yogurt, or simply enjoy it as is.

Notes from Rouba

  • Arabian spice is my blend known in the Middle East as Bharat or 7-spice blend. You can find it at Middle Eastern grocery stores and various supermarkets. Otherwise, you can substitute with 5 spices or allspice.
  • Do not add salt to the rice or meat as Vegeta is quite salty. If you don’t wish to use Vegeta, substitute with salt. What is Vegeta?
  • The pine nuts and almonds are optional. If you don’t have them don’t stress, the dish will still be delicious.
  • Using Chicken stock instead of water will take this dish to another level.

Method

Step 1.

Wash the rice under cold water. Set aside.

Add olive oil to a non-stick pot and fry the pine nuts until golden brown. Remove the nuts and drain on paper towels leaving oil in the pot. Repeat the same process with almonds. The almonds can be drained together with the pine nuts.

Step 2.

Using the same oil, saute the onion until translucent. Add the mince and sauté, breaking up the meat till it’s fine. Once the meat is brown and cooked but still moist, add the rice and mix in the Arabian spice and vegeta or salt. Stir well.

Step 3.

Add boiling water, lower the heat to a simmer and cover the pot with a lid. After 7 minutes stir the rice. Again, after another 7 minutes give the rice another stir, making sure you stir the rice from the bottom to the top. Cook for a further 5-7 minutes or until the rice is cooked. Garnish with golden almonds and pine nuts. Pomegranates can add beautiful colour to this dish if they’re in season.
