Chicken Stock – This recipe is just simple – add a few ingredients in a pot and let it do its thing.
Chicken stock is a staple in any kitchen and there are so many ways to make it. The chicken stock recipe below uses a whole chicken so you can use the meat in soup or another recipe but you can also use this recipe with chicken carcass if the meat is not required.
Ingredients
- 1 whole chicken or chicken carcass
- 1 onion cut into ¼’s
- 1 carrot cut in half
- 1 celery stick cut in half
- 2 bay leaves
- 1 cinnamon stick
- a few sprigs of parsley
- 6 peppercorns (whole)
- 6 liters cold water
Cook’s Note
*discard the cooking vegetables as their texture and flavour will have disappeared.
Step 1.
Place whole chicken along with the rest of the ingredients in a large pot.
Step 2.
Bring to a boil, skim off any froth, then reduce the heat and simmer for 1 ½ hour, skimming as necessary. Season with salt. Strain
