Walnut Basil Pesto can be used as an accompaniment to many roast dishes and it tastes delicious used in this pesto spaghetti with sundried tomatoes

  • 1 cup basil leaves (firmly packed)
  • 1 garlic clove
  • ½ red chili
  • 3 teaspoons grated parmesan cheese
  • 10 walnuts
  • salt and pepper
  • 3-4 tablespoons lemon juice
  • 3 tablespoons olive oil
Notes From Rouba

To sterilise a jar, preheat the oven to 120°C.  Wash the jar and lid in hot soapy water and rinse with hot water.  Place the jar uncovered in the oven for 20 minutes or until fully dry. Do not dry with a tea towel.


Step 1
Place all ingredients in a bowl of a food processor and process until finely chopped and well combined.  Refrigerate in a sterilised jar, covered with a layer of olive oil.
