These Oven-Roasted Chicken Chops are simple and so easy to make. They are ideal for quick weeknight dinners or served as a main at dinner parties. These juicy chops are simply coated with a garlic and chili marinade, seasoned with salt and black pepper, and flavoured with dried herbs.
The best part of this recipe is, it can be prepared in 5 minutes and you then simply place it in the oven for about 50 minutes. It can’t get any easier!
- 6 chicken chops
- 3-4 garlic cloves, crushed
- 1 teaspoon chili paste/mince
- ⅓ cup of olive oil
- salt to season
- ½ teaspoon each of dried oregano and thyme
- 3-4 tablespoons lemon juice
*Marinating the chicken 1-2 hours is ideal.
*Chicken chops are bone-in, skin-on chicken thighs.
*Chicken chops have approximately 1-2 days shelf life when kept in your refrigerator.
*Chicken chops can be frozen for up to six months.
Preheat oven to 190° fan-forced
Place the chicken chops into a bowl and season with salt and pepper.
Using a mortar and pestle, crush the garlic with a sprinkle of salt. Add the chili paste and continue to crush. Slow and steady pour in the olive oil and bring to a paste using a circular motion.
Add the garlic chili paste to the chicken chops and toss to coat evenly massaging all over. Add the dried herbs and lemon. Mix well.
Arrange the marinated chicken chops in a baking dish in one layer. Bake for 45 -50 minutes or until cooked.
