This slight variation to the peanut butter cookies with the addition of the vanilla ice-cream makes these cookies irresistibly soft and chewy.
This is an amazingly easy recipe and the perfect dessert on those hot summer days. Each bite is heavenly goodness of two soft biscuits packed with a scoop or two of vanilla ice cream.
Ingredients
- 200 grams of crunchy peanut butter (crunchy)
- ¾ cup brown sugar
- ¼ teaspoon salt
- 1 teaspoon baking powder
- 1 egg beaten
- Vanilla ice cream

Step 1.
preheat oven to 160° fan-forced. Line a baking pan with baking paper.
In a bowl combine peanut butter, sugar, baking powder, salt and mix well. Add the egg and mix to form a dough. (if the mixture is sticky, let it rest for 5 minutes and begin step 2 with clean hands)
Step 2
Divide the mixture into round balls (130-150 grams) and place them onto the prepared baking tray making sure they are well spaced out. Press down gently to slightly flatten.
Step 3.
Bake in the preheated oven for approximately 10-15 minutes or until just slightly golden in colour. Remove and allow to cool.
Place a generous amount of smooth vanilla ice-cream on one biscuit. Top with another biscuit and press gently but firmly until straight and level.
Makes approximately 6 sandwiches
