How to make chili paste from fresh chili – This is a versatile chili paste recipe made with fresh chili and herbs. Use it as a condiment, sauce, spread, or throughout your cooking for heat and flavour. It’s delicious, and a must-have in the refrigerator.
- 500 grams fresh chili
- 1 head of garlic
- 1 white onion
- ½ teaspoon each of dried oregano and thyme
- salt and pepper
- 1 teaspoon white vinegar
- You can burn your eyes if you rub them from the heat of the pepper. Always wear gloves
Place the garlic, onion, and fresh chili in the bowl of a food processor and process until finely chopped.
PlaceTransfer to a pot. Season with the herbs and simmer on low heat for approximately 20 minutes, occasionally stirring, so the mixture does not burn.
Remove from heat and stir through the white vinegar.
Transfer to clean glass jars, and let cool. Top with olive oil before storing in the refrigerator.
