Ingredients

Main Ingredients

  • sourdough or baguette bread sliced 12 pieces (2½ -3 cm thick)
  • chargrilled capsicum strips (24 strips)
  • 200 grams feta cheese diced into small cubes
  • 12 black olives pitted and halved
  • 3 spring onion finely chopped
  • shredded mozzarella or tasty cheese

Garlic Butter

  • ½ cup salted butter softened at room temperature.
  • 1-2 garlic cloves, crushed
  • 1 tablespoon fresh chopped parsley

  • Garlic butter can be prepared ahead of time and stored in the fridge.
  • Chargrilled capsicum strips can be store-bought – a time-saving tip as you can skip the step of charring the capsicum yourself and simply purchase pre-made strips from the store.
  • “bruschetta.” In Italian, the “ch” sound is pronounced as a “k” sound, so “bruschetta” is pronounced as “broo-SKEH-tah” with an emphasis on the second syllable. However, it’s worth noting that there may be some regional variations in pronunciation.

Method

Step 1.

Begin by making the garlic butter. Combine crushed garlic, softened butter, and a sprinkle of fresh parsley and bring to a smooth paste. Spread generously over the bread and grill for 1 minute so that the bread will soften and butter will melt.

Step 2.

Remove and top with chargrilled capsicum, black olives, feta cheese, and spring onion. Top with tasty Mozzarella cheese and place under the grill again to melt the cheese and lightly toast the bread. Serve immediately.
