Main Ingredients

  • 3 x can chickpea (400 grams), drained and rinsed
  • 3 spring onion chopped
  • 120 grams baby spinach shredded
  • ½ cup flat-leaf parsley finely chopped
  • ½ cup mint finely shredded
  • chili flakes to garnish

Dressing

  • ½ cup olive oil
  • 4-6 tablespoons lemon juice
  • 1 teaspoon paprika
  • 1 teaspoon cumin ground
  • 1-2 garlic cloves crushed
  • salt as required

Along with this delicious recipe, I have the perfect serving platter to share with you, perfect to use for any salad or side dish! This platter comes in a few different sizes and is dishwasher and microwave safe, which is really convenient for regular kitchen use. 

Method

Step 1.

In a large bowl, toss together rinsed chickpeas, parsley, mint, spring onion and shredded spinach.

Step 2.

In a jar combine the dressing ingredients. Close the jar and shake until well combined. Pour over the salad and toss.

Garnish with chili flakes
