A FEW THINGS YOU’LL WANT TO KNOW
Can I make it ahead of time?
Yes. You can prep the lamb mixture earlier and keep it warm, and you can also mix the yogurt and garlic ahead. Assemble everything just before serving. If you assemble it too early, the pasta will soak up the yogurt and the texture won’t be nice.
Will the yogurt split?
No, it won’t. By the time you add the pasta, it’s warm but not piping hot. I usually give the pasta a few shakes in the colander to cool it slightly — warm is perfect.
Can I make it kid-friendly?
Definitely. Leave out the paprika, reduce the garlic, and even skip the chickpeas if you like. It’s very easy to adjust.
What’s the best yogurt to use?
I love using a full-fat, creamy yogurt, but it’s completely up to you. Just keep in mind that very low-fat yogurts can be runnier and less flavourful.
Do I have to add the ghee and nuts on top?
Not at all. It’s traditional for us to heat ghee with pine nuts or slivered almonds and pour it over the top, but the dish is still delicious without it. Totally optional.
Should the pasta be al dente?
No. This dish works best with pasta cooked softer than al dente so it blends nicely with the yogurt.
Why do I keep the meat warm?
I prefer to cook the lamb first and keep it warm, then cook the pasta and assemble straight away. If you cook the lamb last, the pasta ends up sitting in the yogurt too long, which isn’t ideal. This is one of those dishes you assemble and eat right away.
Can I use beef instead of lamb, or mix them?
Yes to both. Beef works well, and a lamb-beef mix is also great.
What can I serve it with?
Honestly, it’s pasta, so it’s already filling and works as a complete meal on its own. Growing up, I always ate this with just some flatbread on the side — a bite of bread, then a spoonful of the creamy yogurt pasta. Simple and so good.
