Macadamia Chocolate Clusters are one of the easiest festive treats you can make at home. I love recipes that feel special without asking much from you, and this is exactly that kind of recipe. With only two main ingredients and no fancy steps, these little clusters come together quickly and always look impressive on the table.

I often make Macadamia Chocolate Clusters when I need something simple but still thoughtful. They’re perfect as a quick dessert, a last-minute edible gift, or something to serve with tea or coffee after dinner. They actually remind me a little of my No-Bake Crunchy Nut Slice — that recipe makes you feel like you’ve pulled off something impressive with almost no effort, and this one has the same spirit: sweet, crunchy, and beautifully festive.

Ingredients

  • 300 grams macadamias, raw and unsalted
  • 270 grams milk chocolate
  • Sea salt flakes, for sprinkling
  • Dried pomegranate flowers or (edible dried rose petals)

  • You can swap the macadamias for almonds, hazelnuts, or cashews.
  • Any chocolate works — milk, dark, or white. Choose what you love.
  • Dried roses, pistachios, or even crushed candy canes make lovely toppings.

Method

Step 1. Roast the Macadamias

Preheat the oven to 180°C (fan-forced) (350°F). Spread the raw macadamias on a baking tray and roast them for 4–5 minutes until lightly golden. Set aside to cool slightly.

Step 2. Melt the Chocolate

Place the milk chocolate in a heatproof bowl and melt it either in the microwave using short bursts, stirring in between, or over a gentle broiler. Make sure it melts smoothly without overheating.

Step 3. Mix and Form Clusters

Stir the roasted macadamias into the melted chocolate until fully coated. Line a tray with baking paper, then spoon the mixture into small clusters on the tray. Sprinkle each cluster with sea salt and lightly crush the dried pomegranate flowers between your fingers so they fall over the top like a fine powder. Chill until set.

You can make it with white Chocolate too!

A FEW THINGS YOU’LL WANT TO KNOW

What if I can’t find dried pomegranate flowers?
Use edible dried rose petals. They give the same beautiful, delicate look. Pomegranate flowers are usually found in Afghan, Persian, or Middle Eastern supermarkets. They add a soft red colour that looks festive, especially over white chocolate.

What chocolate works best?
This is purely personal. Milk chocolate gives a creamy sweetness, dark chocolate feels richer and a little more grown-up, and white chocolate with the red petals is perfect for Christmas or even Eid gifting. You can mix and match too.

Why add sea salt on top?
The salt lifts the whole bite. It cuts through the sweetness and makes the nuts taste even toastier. Don’t skip it — it’s the little detail that brings everything together.

Can I make these as edible gifts?

Do I have to toast the nuts?
If your macadamias are raw, you must toast them. They won’t taste right or have the right texture otherwise. If you buy pre-roasted macadamias, you can use them as they are, or you can still roast them for a few minutes — I often do this to bring out a deeper colour and flavour. Both options work, as long as the nuts are roasted.
