About this recipe

I’ve taken the beloved Palestinian dish, musakhan, and turned it into these flavourful musakhan chicken burgers. Traditionally, musakhan features roasted chicken with sumac, onions, and allspice served on taboon bread. Here, I’ve given it a burger makeover, combining shredded chicken and sumac-spiced onions into soft buns. These musakhan chicken burgers are quick to make and perfect for any gathering.

Ingredients

  • 1 cooked chicken (can be store bought), shredded
  • 300 ml olive oil
  • 5 medium onions diced
  • 3 tablespoon sumac
  • salt to season
  • fresh parsley for garnish
  • 12-18 buns (depending on the size)

Notes from Rouba

  • Mozzarella cheese is optional, but it adds a creamy layer.
  • Fresh lettuce or toasted buns can be a nice textural contrast.

Method

1. Sauté the Onions

In a frying pan, heat the olive oil over medium to high heat. Add the diced onions with a pinch of salt, and sauté for about 10 minutes until soft but not browned. Remove from the heat, drain most of the oil into a small bowl, and leave the onions in the pan.

2. Add Sumac and Chicken

Mix the sumac into the onions, then add the shredded chicken, stirring until everything is well combined.

3. Prepare and Fill the Buns

Cut the rolls in half and hollow out the insides. Fill each bun with the chicken mixture. Optionally, top with mozzarella cheese.

4. Brush and Bake

Brush the tops of the buns with the reserved olive oil, sprinkle with chopped parsley, and bake in a preheated oven at 180°C (350°F) for 10 minutes, or until golden and heated through.
