About this recipe

These Oreo Pistachio Kataifi Sandwiches are my easy take on the viral Dubai chocolate trend, made with ingredients you probably already know and love. I used classic Oreo biscuits here, but honestly, any chocolate biscuit works just as well. The magic is in the contrast — crunchy toasted kataifi, creamy pistachio spread, and that familiar chocolate biscuit on the outside.

I love recipes like this because they feel a little fun without being complicated. There’s no oven, no trays, and no waiting around. You toast, mix, and sandwich — that’s it. It’s the kind of sweet you make when you want something special but don’t feel like baking.

If you enjoy quick treats like this, you’ll also love my Banana Biscuit Snacks, which are soft, sweet, and ready in minutes, or my Chewy Date and Nut Snacks — packed with pistachios and dark chocolate for a more wholesome option that still feels indulgent.

Notes from Rouba

  • Cut the kataifi with scissors or a sharp knife before toasting—it makes it easier to manage.
  • Keep stirring the kataifi as it toasts so it doesn’t burn.
  • Use any chocolate biscuit you have—don’t overthink it.
  • These are best eaten the same day while still crunchy.

Method

Step 1. Prepare the biscuits

Carefully twist open all the Oreo biscuits and remove the cream filling. Set the biscuits aside and place the cream filling into a mixing bowl, ready to use later.

Step 2. Toast the kataifi and make the filling

Melt the butter in a frying pan over medium heat. Add the kataifi and cook, stirring often, for 5–7 minutes until golden and crisp. Remove the pan from the heat and let the kataifi cool slightly in the pan, then add the biscuit cream filling and melted pistachio spread. Stir until everything is evenly mixed and slightly sticky.

Step 3. Assemble the sandwiches

Spoon the kataifi mixture evenly between the chocolate biscuits to make sandwich biscuits, making sure the filling is divided so you have enough for all of them. Drizzle extra melted pistachio spread over the tops and finish with a whole dried rose on each. Chill briefly to help them set before serving.

A FEW THINGS YOU’LL WANT TO KNOW

Do I have to use Oreo biscuits?
Not at all. I used Oreos, but any chocolate biscuit you like will work just fine.

Can I use biscuits without cream filling?
Yes. Simply skip the cream filling — the pistachio and kataifi will still carry the flavour.

Can I toast the kataifi without butter?
You can, but keep stirring constantly so it doesn’t burn. It also takes longer. The butter adds flavour and helps it crisp evenly.

Can I change the pistachio spread?
You can use chocolate or caramel spread, but pistachio is what gives this recipe that Dubai-style flavour.

Why does this recipe make 12–14 sandwiches if the Oreo pack has more biscuits?
I like to be generous with the filling, so you may not use the whole pack of Oreos. If you spread it thinner, you’ll get more, but I prefer fewer sandwiches with a proper crunch-to-cream ratio.
