These Pistachio Date Chocolate Balls are my way of changing things up a little—especially around Ramadan and the new year. Dates hold a special place in our culture. They symbolise tradition and hospitality, and in my Lebanese home, they’re always part of breaking the fast. This recipe takes something familiar and turns it into a small, indulgent treat that still feels grounded and meaningful.

What I love most about these Pistachio Date Chocolate Balls is how simple they are. Soft dates, crushed pistachios, and a smooth chocolate coating come together quickly, yet they feel special enough to share. They’re a fun way to introduce dates during Ramadan, especially if you’re after something a little different from the usual plate of dates on the table.  They also make a perfect edible gift.

Ingredients

  • 1 cup raw pistachios, unsalted
  • ¼ cup pistachio paste/spread
  • 12 Medjool dates, pitted
  • 250 grams dark chocolate, chopped
  • Pistachio spread extra, for drizzling

  • Use Medjool dates if you can—they’re softer and blend better.
  • If your mixture feels dry, a little date soaking water fixes it quickly.
  • I like dark chocolate here to balance the sweetness of the dates.
  • These are great made ahead and kept chilled until needed.

Method

Step 1. Make the pistachio date mixture

Add the pistachios to a food processor and pulse until they are roughly chopped. Add the dates and pistachio paste, then process until the mixture looks crumbly at first but comes together and holds when pressed.

Step 2. Roll the balls

Portion the mixture into 25 grams portions and roll into round balls. You should get about 15 balls. Place them on a tray lined with baking paper.

Step 3. Coat with chocolate and finish

Melt the dark chocolate gently until smooth. Using two forks, dip each ball into the melted chocolate, letting the excess drip off, then place back onto the lined tray. Once the chocolate has set, drizzle over a little pistachio spread. Allow to cool completely before serving or storing.

A FEW THINGS YOU’LL WANT TO KNOW

Can I make these ahead of time?
Yes, absolutely. They keep well in the fridge for up to a week, which makes them perfect for Ramadan prep.

Can I swap the pistachios for another nut?
You can, but pistachios pair beautifully with dates. Almonds or cashews will work if that’s what you have.

Are these traditional?
Not in the classic sense—and that’s the point. This is just another way I like to use dates during Ramadan, especially when I want something fun and a little different.

Do I have to coat them fully in chocolate?
Not at all. You can drizzle the chocolate over the balls instead if you prefer something lighter and less rich.
