Pistachio Kataifi Stuffed Dates are a simple, no-bake sweet with a little theatre. I toast kataifi until golden, stir through pistachio spread, then pack the crunchy-creamy filling into soft Medjool dates and finish with a drizzle. The result is elegant enough for platters yet easy enough for a weeknight treat.

My original go-to for Ramadan has always been nut-stuffed dates. Think of these Pistachio Kataifi Stuffed Dates as another option for your table: keep a batch of nut-filled dates for tradition, and add a tray of kataifi-filled dates for something different. You can finish them with dark chocolate, a white-chocolate drizzle for contrast, or even a warm pistachio drizzle to echo the filling —each version looks beautiful on an iftar or Eid platter.

  • 100 grams kataifi pastry, finely chopped
  • 30 grams unsalted butter
  • 1⁄3 cup pistachio spread
  • 20–24 Medjool dates, pitted
  • 100 grams dark chocolate, melted (for drizzling)

Method

Step 1. Toast & mix the filling

Melt the butter in a large frying pan over medium heat. Add the chopped kataifi and cook, stirring often, for 6–8 minutes until evenly golden. Remove from the heat, then stir in the pistachio spread until the mixture clumps and holds together. Set aside for 5 minutes to cool slightly.

Step 2. Fill dates & finish

Split the dates lengthways and remove the stones if not already pitted. Spoon or press some pistachio-kataifi filling into each date, close gently, then arrange on a tray. Drizzle with melted dark chocolate and finish with crushed pistachios or a tiny rose bud if you like.

A FEW THINGS YOU’LL WANT TO KNOW

How many dates will this make?
Plan on 20–24 medium Medjool dates. Larger dates may yield closer to 20; smaller ones up to 24– 26.

Can I dry-toast the kataifi (no butter)?
Yes. Dry-toast over medium-low heat, stirring constantly. It takes a bit longer and needs attention, but it works.

When should I drizzle the chocolate?
For family, you can skip it. For guests or gifting, drizzle when you make them straight away and add a little garnish—it looks beautiful.

Storage tips?
Keep in an airtight container for up to 3-5 days. You can even keep them chilled in an airtight container for up to 3 days. They’ll firm up slightly and are lovely cold.
