Ingredients

Main Ingredients

  • 1 kg boiled potatoes, cooled
  • diced 1 bunch of radish, thinly sliced
  • 4 spring onions, thinly chopped
  • 1/2 cup chopped parsley

The Dressing

  • 3-4 tablespoons lemon juice
  • ¼ cup olive oil
  • 2 garlic cloves, crushed
  • 1 tablespoon sumac
  • Salt and pepper, to taste

  • Boil potatoes until tender but not mushy
  • Slice radishes thinly for a crunchy texture
  • Use fresh parsley and spring onions for added flavour
  • Chill the salad in the fridge for at least half an hour before serving
  • The best Potato to use are waxy potatoes like red or yellow potatoes or Yukon

Method

Step 1.

In a large bowl, combine the diced potatoes, sliced radish, spring onions, and chopped parsley.

In a separate small bowl, whisk together the lemon juice, olive oil, minced garlic, sumac, salt, and pepper until well combined.

Pour the dressing over the potato mixture and toss gently to coat.

if this happened now—I would not have let anything stop me. This was for a good cause, but I also believe that everything happens for a reason. The project was meant to be set aside, and I needed to focus on my boys, who were still young.
A couple of years later, we received the heartbreaking news of Auntie Suad’s passing 🥲🙏🏽It felt as though a part of the story had been left unfinished. A few weeks later, something arrived in the mail that would bring me to tears 😭 There’s more 🤗
