This Quick Ashta Ricotta Spread is my spin on the traditional Middle Eastern Ashta, but it’s not your classic recipe. Traditional ashta, or clotted cream, is creamy and rich, perfect for desserts, fruits, or pastries. However, I wanted something simpler and quicker to make, using ingredients I always have on hand. Initially, I created this recipe to complement my take on Middle Eastern French toast, but as I experimented with flavours, I discovered how versatile it truly is. This recipe turned into not just a sweet filling but a smooth, indulgent spread that’s perfect for so many dishes.

500 grams ricotta, well-drained
125 grams mascarpone
¼ cup honey
2 teaspoons rose water

Method
Step 1. Process ricotta
Place the ricotta in a food processor and process for 2 minutes until smooth.
Step 2. Mix ingredients
Add the mascarpone, honey, and rose water to the processor and Blend everything together until the mixture is creamy and smooth. Transfer to a bowl and serve as a spread or dip.
