About this recipe

This Rose and Pistachio Rocky Road is my take on a classic treat, made with all the flavours I grew up loving. I use pistachios, toasted coconut, Turkish delight and rose petals for something festive without being complicated. And as much as my nieces and nephews were hoping I’d hide a few lollies inside, I wanted this batch to be filled with the ingredients that feel familiar and Middle Eastern to us.

You can make this rocky road for Christmas, Easter, Eid or any moment you’re hosting. It has that perfect mix of chewy, crunchy and floral, and it always looks like you spent far longer on it than you actually did. Because this Rose and Pistachio Rocky Road comes together so quickly, it’s also ideal for gifting or preparing ahead.

Ingredients

  • 500 grams milk chocolate, chopped
  • 200 grams large marshmallows, cut in half
  • 1 cup flaked coconut (50 grams), toasting is optional — (see notes below)
  • 1 cup (150 grams) pistachios, roughly chopped
  • 200 grams Turkish delight, chopped into cubes
  • 50 grams white chocolate chips, melted + extra for granish
  • Dried edible rose petals, for sprinkling

Notes from Rouba

  • Toasting the coconut makes a big difference in flavour, so I always do it if I have a few extra minutes.
  • I like using larger marshmallows because they look beautiful when the rocky road is sliced.
  • Don’t skip the full chill time—this helps the pieces hold their shape.
  • I prefer pistachios for colour, but any nut you love works.

Method

Step 1. Prepare and Melt

Line a 20 cm square tin with baking paper, leaving some overhang so you can lift the rocky road out easily.

Combine the marshmallows, toasted coconut, pistachios and Turkish delight in a large bowl, then pour over the melted milk chocolate and fold until everything is well coated. 

Step 2. Mix and Set

Place the milk chocolate in a heatproof bowl and melt it over a saucepan of gently simmering water or microwave it in short bursts, stirring until smooth.

Tip the mixture into the lined tin, press it in gently, drizzle the melted white chocolate over the top, sprinkle with rose petals and refrigerate for 2 hours or until firm before lifting it out and cutting into pieces.

A FEW THINGS YOU’LL WANT TO KNOW

Can I use dark chocolate instead of milk chocolate?
Yes, absolutely. Dark chocolate gives it a richer, slightly more grown-up flavour. Use whichever chocolate your family prefers.

Do I have to melt the white chocolate and drizzle it on top?
Not at all. I added the drizzle because I love the contrast against the rose petals. You can skip it entirely, finish with just rose petals, or sprinkle a handful of nuts instead.

Can I replace any of the fillings?
Yes—rocky road is meant to be personalised. Swap nuts, change the Turkish delight, add dried fruit, or adjust the textures to suit your taste.

Can I use smaller marshmallows instead of large ones?
You can. I like the look of larger pieces when the rocky road is cut, but smaller marshmallows work perfectly too.

Can I use less chocolate?
I’ve tried reducing the chocolate before, but it doesn’t do the rocky road any justice. You need enough chocolate to coat the ingredients well so the slices hold together.

Do I need to toast the coconut?
No — the recipe works perfectly with plain flaked coconut. Toasting it just adds extra flavour and a light crunch, so do it if you have a minute, but it’s not essential.
