About this recipe

Ruz b’halib — Middle Eastern rice pudding — is one of those recipes tied straight to my childhood kitchen memories. My mum would slow-cook hers for three to four hours, stirring patiently until it turned a soft, golden yellow rather than pure white, and the result was outrageously delicious. But let’s be honest: most of us busy mums don’t have three to four hours to hover over a stove.

That’s why I created this quicker version of rice pudding — just as creamy and comforting, made with fragrant vanilla, fresh strawberries and cream, but ready in a fraction of the time. It’s perfect for busy weeknights, last-minute cravings, or whenever you want that traditional flavour without the long simmer.

This gluten-free rice pudding recipe comes together with just a few simple ingredients, making it a lovely choice for family gatherings and dinner parties alike. Serve it warm or chilled, topped with whipped cream and fresh strawberries for extra sweetness — or if you’re a pudding fanatic like us, try the Arabian milk pudding too!

Ingredients

  • ⅓ cup rice (short-grain)
  • 2 cups of water
  • 2 cups of milk
  • ¼ cup of sugar
  • Vanilla pod
  • ½ cup of whipped cream + extra for garnishing
  • fresh strawberries

Notes from Rouba

  • Jasmine rice gives you a floral flavour in pudding.
  • Oat milk or coconut milk can be used as dairy-free alternatives due to their higher fat percentage.
  • Taste the rice once the water is absorbed as cooking time may vary among rice brands. Add more water if needed.
  • Stir regularly when making rice pudding for the perfect creamy consistency.

Method

Step 1. Cook the Rice

Place the rice in a saucepan with 2 cups of water, bring to a boil, reduce heat, and cook on low uncovered for approximately 30 minutes.

Step 2. Add the Milk and Sugar

Stir in the milk and sugar. Scrape out the vanilla pod and add it to the rice mixture along with the pod. Cook uncovered on very low heat for approximately 30 minutes or until rice is cooked through stirring regularly.

Step 3. Rest and Fold

Turn off the heat and stand for 5 minutes before folding in the whipped cream.

Step 4. Chill and Serve

Serve in a large bowl or individual serving dishes. Refrigerate for 3-4 hours.
Layer with whipped cream and strawberries before serving

A FEW THINGS YOU'LL WANT TO KNOW

Can I use a different type of rice?
Short-grain rice gives the classic creamy texture, but jasmine rice works well too and adds a lovely floral flavour to the pudding. Basmati rice isn't the right choice for this recipe, as it won't give you the same creamy result.

Can I make this dairy-free?
Yes — swap the milk and cream for oat milk or coconut milk, as their higher fat content makes them a great dairy-free alternative.

Why is my rice pudding too thick or too thin?
Cooking times can vary between rice brands, so taste the rice once the water has been absorbed. If it needs more time, add a splash more water and keep cooking.

What's the trick to that creamy consistency?
Stir regularly throughout cooking — that's what gives ruz b'halib its signature creamy texture.

Can I serve it warm?
Ruz b'halib can be served warm, but keep in mind it will be runny and soft, and taste sweeter than it does once chilled. For the classic set, creamy texture, refrigerate it and serve chilled, topped with whipped cream and fresh strawberries.
