It’s rich, smooth, and surprisingly simple, and what I love about this recipe is that Toblerone works so beautifully here. The chocolate melts down smoothly, the honey and nougat add just enough texture, and you still get that same light, airy mousse every time when you follow the recipe as written.

Ingredients

  • 250 grams toblerone chocolate
  • 4 large eggs, separated
  • 3⁄4 cup white sugar
  • 1 teaspoon vanilla essence
  • 1⁄4 teaspoon salt
  • 300 ml thickened cream (reserve some for topping) + extra for topping
  • 2 tablespoons icing sugar
  • Pistachios, for garnish
  • Extra chocolate, for garnish

Method

Step 1. Melt the Chocolate

Break or cut the chocolate into small pieces and place them in a heatproof bowl. Set the bowl over a saucepan of gently simmering water and let the chocolate melt. Remove from the heat and allow it to cool slightly. You can also melt the chocolate in the microwave, heating it in short bursts and stirring in between.

Step 2. Prepare the Egg Mixtures

In a clean mixing bowl, beat the egg whites with an electric mixer gradually adding the white sugar while mixing, and continue beating until the whites become glossy and hold stiff peaks; this takes several minutes, so be patient.

In a second bowl, whisk the egg yolks with the vanilla essence using an electric beater until pale yellow. Slowly pour in the melted chocolate and stir by hand until combined.

By hand fold the stiff egg whites into the chocolate mixture in three or four additions, working gently so the mixture stays light and airy.

Step 3. Whip the Cream and Fold

Using the same bowl that held the egg yolks, add the thickened cream and icing sugar. Beat with an electric mixer until soft peaks form. Fold into the chocolate mixture until smooth and well combined.

Step 4. Chill and Finish

Spoon the mousse evenly into serving bowls or glasses. Refrigerate for at least 4-6 hours, or until fully set. Before serving, top with the reserved whipped cream, chocolate shavings and a sprinkle of pistachios.

A FEW THINGS YOU’LL WANT TO KNOW

How should I melt the chocolate?
The bain-marie method (a bowl over simmering water) is gentle and safe, but the microwave works too. Just heat in short bursts and stir well so the chocolate doesn’t burn.

Why can I use the same bowl for the cream without washing it?
Once the egg white mixture is removed, there’s no harm in whipping the cream in the same bowl. It doesn’t affect the recipe at all and it saves washing extra dishes.

How gentle do I need to be when folding?
Very. Folding is what keeps the mousse light and airy. Use a soft hand and take your time—rushing can deflate the mixture.

How should I serve it?
Use any glass you like: mini glasses, vintage dessert cups, or tall glasses on a stand. It always looks pretty once it’s topped with cream, chocolate shavings, or pistachios.

Do I have to top it with whipped cream?
Not at all. You can use just chocolate shavings, only pistachios, crushed nuts, or even leave it plain. The mousse itself is rich enough.

Can I whip all the cream at once, including the amount for garnish?
Yes—you can whip the full 400 millilitres in one go, as long as you’re serving the mousse later that day. Just keep in mind that when it’s time to fold the cream into the mousse, you’ll need to estimate by eye what roughly 300 millilitres of whipped cream looks like. If that feels tricky, I always recommend whipping the 300 millilitres for the mousse separately and then whipping the extra cream for the topping on its own. If the whipped cream softens in the fridge overnight, you can try re-whipping it the next day, but it doesn’t always return to the same firmness, so fresh is usually best for garnishing.

What type of chocolate works best?
Any chocolate you enjoy works beautifully. I’ve made this mousse with dark chocolate, milk chocolate, and Toblerone. 

Why do I need to use large eggs?
Eggs create the structure of the mousse, so the size matters. Large eggs give you the right balance of whites and yolks, which keeps the mousse thick, fluffy, and stable.

What if I don’t have Toblerone?
No stress—you can still make this mousse without it. For every 200 g Toblerone (the halved recipe amount), use:
175 g good-quality milk chocolate (like Lindt or Cadbury Dairy Milk)
1 tablespoon honey (to replace the honey flavour in Toblerone)
25 g finely chopped nougat or toasted almonds (to give that little crunch)
Melt the chocolate with the honey, then fold the chopped nougat or nuts through once the mousse is nearly done. It won’t be exactly the same, but it’s a really good substitute that still gives you that signature flavour and texture.
