Ingredients

Main Ingredients

  • ½ (500g) papaya, peeled and chopped
  • 2 mangos, peeled and chopped
  • Pulp of 3 passion fruits
  • 2 bananas, peeled and sliced
  • ¼ cup lemon juice

For the Topping

  • ½ cup self-raising flour
  • 2⁄3 cup sugar
  • ¼ cup desiccated coconut
  • 1 teaspoon cinnamon
  • 3 tablespoons butter (40 grams)
  • ¼ cup walnuts
  • 1 cup water

  • Use ripe fruit for maximum sweetness and flavour.
  • Use chilled butter for the topping to achieve a crumbly texture.
  • Pulse the topping mixture until it resembles breadcrumbs.
  • Don’t worry if the topping mixture looks curdled when you add water, this is normal.
  • Serve the pudding warm with ice cream or whipped cream for a delicious and comforting dessert.
  • Store any leftovers in the refrigerator for up to 3 days.

Method

Step 1.

Preheat your oven to 180°C (350°F).

In a shallow oven dish (about 20cm), add the chopped papaya, mango, and passion fruit pulp. Arrange the sliced bananas on top of the fruit mixture and pour over the lemon juice.

 

Step 2.

In a food processor, add the self-raising flour, sugar, desiccated coconut, cinnamon, butter, and walnuts. Pulse until the mixture resembles breadcrumbs.

Add 1 cup of water to the topping mixture and pulse again. The mixture will look curdled but don't worry, this is normal.

Pour the topping mixture over the fruit and banana into the oven dish, making sure to spread it evenly.

Step 3.

Bake in the preheated oven for 45 minutes, or until the topping is golden brown and crispy.

Serve warm with ice cream or whipped cream.
