Step 1. Prepare the Base:
Grease and line a springform pan 20cm
Crush the Tim Tams in a food processor until fine. Mix in the melted butter and finely chopped dates until well combined. Press into the base the lined springform pan. Chill in the fridge.
Step 2. Make the Filling:
Beat the cream cheese, powdered sugar, vanilla, and orange blossom water until smooth.
In another bowl, whip the cream until soft peaks form, then by hand gently fold into the cream cheese mixture with the ground wattleseed. Pour over the biscuit base and smooth the top. Chill in the fridge for at least 4 hours.
Tip: If you're using a stand mixer like a KitchenAid, whip the cream first and set it aside. Then, in the same bowl (no need to wash it), beat the cream cheese, powdered sugar, vanilla, and orange blossom water until smooth. This saves time and keeps cleanup easy. Gently fold the whipped cream into the mixture by hand, then continue with the recipe as usual.
Step 3. Garnish:
Before serving, line the outside of the cheesecake with upright Tim Tams for decoration. Top with a few lilly pilly berries or edible flowers from your garden for a fresh garnish.
