Ingredients

  • 220 grams self-raising flour
  • 30 grams of cocoa (⅓ cup)
  • 2 teaspoons baking powder
  • 150 grams caster sugar
  • 100 grams of milk chocolate, grated
  • 4 eggs beaten
  • 2 tablespoons golden syrup
  • 200 grams of softened butter
  • grated rind of 2 oranges
  • juice of 2 oranges pulp-free (approximately 180-200 ml)
  • icing sugar to dust (optional)

Notes from Rouba

  • A cake tester can be anything from a wooden skewer to a toothpick. Insert into the centre of the cake and remove it. Your cake is ready if the skewer comes out clean. If there are any crumbs attached to the skewer, place the cake back into the oven for several more minutes.
  • I used my Nordic ware heritage loaf pan. Just note, the quantity above is too much for the heritage loaf pan. You will need to reduce accordingly or perhaps make some mini cupcakes with the remaining batter.

Method

Step 1.

Heat oven to 170°. Grease a 23cm round cake tin generously with butter.

Add all the dry ingredients including the grated chocolate into a large bowl and combine. 

In a bowl whisk the eggs slightly, add the golden syrup and softened butter, and combine well for 1-2 minutes. Pour into the dry ingredients.

Step 2.

Add zest and juice of the orange and mix until well combined. Pour into the prepared cake tin and smooth the top.

 

Step 3.

Bake in the preheated oven for approximately 35-40 minutes or until cooked through and your cake tester comes out clean. Rest for 5 minutes and then transfer onto a wire rack to completely cool.

Dust lightly with icing sugar and decorate with fresh orange segments.
