Attir – sugar syrup is the magic ingredient used in Middle Eastern sweets. This syrup is infused with orange blossom or rosewater and drizzled over baked or fried desserts. It’s often also served on the side and each person adds as much syrup as they like.
The syrup can have a sticky consistency and can be as thick as maple syrup or honey. The longer you boil it, the thicker it gets.
You can use either brown or white sugar to make your sugar syrup. Brown sugar will produce a dark brown colour while white sugar will create a transparent syrup with a lighter flavour.
Step 1.
To make the sugar syrup, place all ingredients in a small saucepan over medium heat. Bring to a boil (this happens fairly fast), lower the heat, and continue to boil for approximately 6-7 minutes until syrup slightly thickens. Remove from heat and cool completely.
