Method
Step 1. Marinate the lamb
- In a large bowl, mix together all the marinade ingredients: lemon juice, vinegar, garlic, olive oil, mustard, and the spices including cracked black pepper. Season the lamb with salt, then pour the marinade over the meat. Massage the marinade into the lamb until every piece is well coated. Cover and refrigerate for at least a few hours, or overnight. Bring the meat to room temperature before cooking.
Step 2. Stack and wrap
- Stack the marinated lamb slices onto a skewer tray as shown. Wrap the entire stack with baking paper, followed by a layer of aluminium foil. If you don’t have a tray to stack the meat, see the notes below.
Step 3. Roast
- Preheat the oven to 180°C (fan-forced) 350°F.
- Place the wrapped skewer tray in the oven and roast for 1 1⁄2 hour. Unwrap, then return to the oven and continue roasting for another 1 hour, or until the meat is cooked through and golden. Let it rest briefly before slicing and serving.
- To assemble your shawarma wraps, start with a layer of lamb—cut into strips—down the centre of warm Lebanese bread. Add pickles, some fries, slices of tomato, and a sprinkle of chopped parsley. Finish with a generous drizzle of tahini sauce, then roll it up and serve
