A week of meals that feels anything but ordinary — Lebanese street food, a slow-cooked classic made simple, a stunning salad that came together by happy accident, and a no-bake dessert you’ll want to keep on hand all week.

This week’s plan has a really nice mix — something fun and quick, something warm and nourishing, something fresh and impressive, and something sweet you can make in minutes. As always, every recipe is linked below so you can jump straight in.

 

This Week’s Meal Plan

Meal 1: Lebanese Mini Tacos

This one is a weeknight game-changer. Spiced beef mince pressed straight onto mini tortillas and cooked meat-side down in the pan — the caramelisation you get is something else. Pile them high with pickled turnips, shredded lettuce and a drizzle of mint tahini sauce, then set everything out on the table and let everyone build their own. Relaxed, fun, and genuinely delicious.

Meal 2: Baba Ghanoush Halloumi Salad

This one came together on a day when nothing was going right in the kitchen — and it turned out to be one of my favourites. Smoky baba ghanoush as the base, golden halloumi, sweet roasted beetroot, rocket, walnuts and a drizzle of pomegranate molasses. It looks like something from a restaurant but it’s completely achievable at home, and it can be prepped ahead.

Meal 3: Shish Barak with Lentils

All the soul of a classic shish barak — that silky garlic yogurt sauce, the lamb, the coriander — without making a single dumpling. Lentils take the place of the dough, making this a one-pot meal that’s hearty, nourishing, and honestly just as comforting as the original. This is the kind of dish that warms the whole house. Serve it over rice and don’t skip the toasted pine nuts on top.

Meal 4: Greek Salad from Rhodes

This recipe has a story behind it. My husband surprised me with a cooking class at a local taverna in Rhodes, and what Yiannis taught me that day completely changed the way I make this salad. No chopping board — everything cut by hand directly into the bowl. A whole block of feta in the centre, never crumbled. No dressing, just the best olive oil you have. Simple, honest, and unforgettable.

Dessert: Macadamia Chocolate Clusters

Two ingredients. Fifteen minutes. That’s it. Roasted macadamias, melted chocolate, a sprinkle of sea salt and a dusting of dried pomegranate flowers — these little clusters look like they came from a beautiful gift shop. Make a batch at the start of the week and keep them in the fridge. They won’t last long.

That’s me at the age of 32 with Merlin, who worked closely with Palestinian families. Together, we were so excited about the project. After that unforgettable visit with Auntie Suad, I was filled with excitement about the project. The women I met were inspiring, and together we had even come up with a name for the cookbook: Taste of Palestine. 🥰🇵🇸 It was a name that captured the heart of what we wanted to share—stories, recipes, and traditions tied to the land and its people.

But for many reasons, the project didn’t go ahead. At the time, I wasn’t prepared for the reality that not everyone would understand or support what I was doing. There were people who gossiped, joked, and made me question myself. Looking back now, I see that they were the minority, but their words had a way of making me doubt myself 🥺

if this happened now—I would not have let anything stop me. This was for a good cause, but I also believe that everything happens for a reason. The project was meant to be set aside, and I needed to focus on my boys, who were still young.
A couple of years later, we received the heartbreaking news of Auntie Suad’s passing 🥲🙏🏽It felt as though a part of the story had been left unfinished. A few weeks later, something arrived in the mail that would bring me to tears 😭 There’s more 🤗
