This week feels like a real mix of my kitchen — quieter, lighter dinners for the nights you just want something gentle, a couple of proper pantry-staple lifesavers for the busy nights in between, and a dessert that genuinely surprised even me when it came together. There’s something here for every kind of night this week throws at you.

This Week’s Meal Plan

Meal 1: Lamb Broad Bean Stew

This is the version my mum used to make on quieter nights — no tomato, just tender lamb backstrap and fresh broad beans simmered in a light, golden broth until everything is soft and comforting. It’s finished with a quick fry of garlic and a handful of fresh coriander stirred through right at the end, so that garlic flavour really sits on top rather than disappearing into the pot. Serve it over vermicelli rice and let the broth do the rest.

Meal 2: Cheat Mjadara – Lentil Rice

This one is for anyone who’s ever wanted to put something proper on the table but just didn’t have the time, the confidence or the headspace for a long, traditional cook. Canned lentils, basmati rice and golden onions, ready in under 25 minutes, with a hit of cumin to keep it properly comforting. It’s a forgiving, no-stress version of the mjadara I grew up with — and honestly, it’s worth doubling so you’ve got leftovers for the week ahead.

Meal 3: Tuna & White Bean Salad

There’s something about a good salad phase that just takes over, and this one earned its permanent spot in my rotation. White beans, good quality tuna, baby spinach and torn parsley, with red onion coated in sumac for that lovely tartness and a simple lemon garlic dressing tying it all together. It comes together with things already sitting in your pantry, and somehow it delivers every single time. A light dinner on its own, or serve it with warm flatbread if you want to bulk it out.

Meal 4: Creamy Chicken Fettuccine

One of the first recipes I ever learned to cook, passed on to me by a dear Italian neighbour when I got married. The secret is a quick bechamel stirred through the cream sauce — it sounds like a small step, but it’s what makes this so rich and silky. Chicken, mushrooms, garlic and oregano, all tossed through fettuccine for the kind of quick, comforting dinner that’s guaranteed to please everyone at the table.

Dessert: Knafeh Nest with Ashta Cream

I’ll be honest, I wasn’t sure this technique was going to work when I first tried it — but the moment I lifted that second tray off and saw the most perfectly golden, crispy kataifi nest underneath, I was completely sold. It’s filled with a silky orange blossom ashta cream, finished with ground pistachio and edible roses, and it’s a proper make-ahead dessert — all the work happens the night before, so all you do on the day is garnish and serve. This is the one that earns its place at the table.

That’s me at the age of 32 with Merlin, who worked closely with Palestinian families. Together, we were so excited about the project. After that unforgettable visit with Auntie Suad, I was filled with excitement about the project. The women I met were inspiring, and together we had even come up with a name for the cookbook: Taste of Palestine. 🥰🇵🇸 It was a name that captured the heart of what we wanted to share—stories, recipes, and traditions tied to the land and its people.

But for many reasons, the project didn’t go ahead. At the time, I wasn’t prepared for the reality that not everyone would understand or support what I was doing. There were people who gossiped, joked, and made me question myself. Looking back now, I see that they were the minority, but their words had a way of making me doubt myself 🥺

if this happened now—I would not have let anything stop me. This was for a good cause, but I also believe that everything happens for a reason. The project was meant to be set aside, and I needed to focus on my boys, who were still young.
A couple of years later, we received the heartbreaking news of Auntie Suad’s passing 🥲🙏🏽It felt as though a part of the story had been left unfinished. A few weeks later, something arrived in the mail that would bring me to tears 😭 There’s more 🤗
