Method
Step 1. Prepare the Meat Mixture
- Place the onion in a food processor and blend until very fine. Add the beef, garlic powder, onion powder, cumin, ground coriander, black pepper, chilli, salt and yoghurt. Blend again until the mixture becomes sticky and well combined.
Step 2. Shape the Döner Rolls
- Transfer the mixture to a bowl and divide it into eight portions. Roll each portion into a ball, place it between two sheets of baking paper, and roll it out as thin as possible. Remove the top sheet of baking paper and fold the meat from the shorter end, using the bottom sheet to help roll it into a log.
Step 3. Bake the Döner
- Place the rolls onto a baking tray and add sweet peppers and cherry tomatoes if you like. Preheat the oven to 220°C (fan-forced) (425°F) and bake the rolls for 20 minutes until cooked through.
Step 4. Prepare the Condiments
- While the döner bakes, mix the sliced onion with salt and sumac until softened, then mix through the parsley.
- Stir together the mayonnaise, garlic, paprika and lemon juice to make the aioli.
- Whisk the olive oil, pomegranate molasses and tomato paste to make the glaze.
