These Lamb Roast Rolls are one of my favourite ways to turn leftovers into something completely new. I don’t give exact quantities here because it really depends on how much roast lamb you have left and how many rolls you want to make. Some days I make a few for the kids, and other times I use the whole tray of leftovers and fill a big platter.

I love these Lamb Roast Rolls because they’re fast, flexible, and built on flavour. You’re simply layering what’s already in your roasting tray—soft roasted garlic, those golden potatoes, and the tender shredded lamb. Then I finish them with pickled cabbage, feta, and a little hot sauce. It’s such a good combo, and the colours look beautiful on the table.

Notes from Rouba

  • Soft roasted garlic: This melts into the roll and adds so much flavour. I always grab whatever garlic is left at the bottom of the roasting tray.
  • Roasted potatoes: They give body and make the rolls more filling. Any crispy bits are a bonus.
  • Pickled cabbage: Brings acidity and colour—cuts through the richness of the lamb beautifully.
  • Feta: Adds saltiness and creaminess. It ties everything together.
  • Hot sauce: A little heat goes a long way. Use your favourite.

Method

Step 1. Prepare the Fillings

Gather all the leftover elements from your lamb roast—soft roasted garlic, potatoes, and shredded lamb. Keep your rolls and condiments close by so everything is easy to assemble.

Step 2. Build the Rolls

Slice each roll open and spread the soft roasted garlic on the base. Add the roasted potatoes and a generous amount of shredded lamb.

Step 3. Add the Toppings

Top the lamb with pickled red cabbage and crumble over some feta. Drizzle with hot sauce and add lettuce if you like it fresh and crunchy.

A FEW THINGS YOU’LL WANT TO KNOW

Do I need to heat the rolls?
You can, but you don’t have to. Warm rolls do make everything softer and extra comforting.

Can I swap the pickled cabbage?
Yes—use sauerkraut, pickled onions, or even leftover tabouli for something fresh.

What rolls work best?
Milk rolls, brioche rolls, or soft dinner rolls. Anything that’s not too crusty.

Does this work with other meats?
Absolutely. Roast beef, chicken, or lamb leg all work well—it’s the toppings that make it special.

Can I make a big tray for guests?
Yes! Pile them onto a platter, garnish with fresh mint, and serve alongside the roast if you’re entertaining.

Can I cheat and not make the lamb roast—just buy it?
Of course. Buy a cooked lamb shoulder and use that instead. The flavours won’t be exactly the same as my Slow Lamb Roast, but it still works beautifully for these rolls.
