About this recipe

I didn’t grow up eating food with cream at all. It was something I learned much later in life from a beautiful Italian friend who is sadly no longer with us—but her recipes live on. I can still remember the aroma of her kitchen, the warmth of her table, and how she taught me to make cream-based dishes of all kinds. This creamy beef with vegetables recipe is one of those comforting meals that feels both homely and a little bit special.

What I love most about creamy recipes is their flexibility. You can serve this creamy beef with vegetables with rice, pasta, or even crusty bread to soak up the rich sauce. Over the years, I’ve cooked many cream-based dishes that have become family favourites. Ingredients

  • 3 tablespoons olive oil
  • 500 grams beef strips
  • 3 garlic cloves, minced
  • 1 onion, sliced
  • 1 chicken stock cube, crumbled
  • 1 red capsicum, cut into matchsticks
  • 1 zucchini, cut into matchsticks
  • 1 teaspoon Italian herbs
  • 500 ml thickened cream
  • Salt and pepper, to season

  • Don’t over-simmer the sauce—it thickens naturally as it cools.
  • If you like extra colour, add more capsicum in different shades.
  • Some creams are naturally thicker than others depending on the brand. If yours feels too heavy, loosen it with a splash of stock or water.

Method

Step 1. Sauté Aromatics and Beef

Heat the olive oil in a large frying pan over medium heat. Add the beef strips and cook until they begin to brown lightly. Stir in the garlic and sauté for just a minute or two until fragrant and season with salt  Add the onion and continue cooking until softened and slightly golden.

Step 2. Add Vegetables and Season

Crumble the chicken stock cube directly into the pan and stir to combine. Add the red capsicum and cook for a few minutes until it begins to soften. Mix in the zucchini matchsticks, then season with salt, pepper, and Italian herbs. Allow the vegetables to cook until just tender but still vibrant.

Step 3. Creamy Finish

Pour in the thickened cream and gently stir everything together. Reduce the heat to low and let the sauce simmer gently for 3-4 minutes. The cream will thicken slightly, coating the beef and vegetables in a luscious sauce. Avoid boiling the cream too vigorously.

Can I serve this with pasta or rice?
Yes! This creamy beef is equally good with pasta, rice, or even crusty bread for dipping.

What vegetables can I add?
Get creative, but choose vegetables you can slice into matchsticks so they cook quickly—think carrots, snow peas, or even green beans.

What if my cream gets too thick?
Cream naturally thickens as it cools. If it feels too heavy, add a splash of stock or water to loosen it. It reheats well too.

Which cream should I use?
In Australia, thickened cream works best—it’s slightly runnier and ideal for cooking. In the US, I believe this is called “heavy cream.” Both give you that rich, silky texture.

What happens if I let the cream boil?
If you simmer it gently and only for a few minutes, the cream will thicken beautifully. But if you boil it vigorously, the cream can split, turn darker, and lose its flavour completely.
