Step 1. Prepare the Pudding Batter
- Preheat your oven to 175°C (350°F) and grease a 21 x 31 cm rectangular baking dish.
- In a large mixing bowl, whisk the eggs. Add the sugar and salt, and whisk again until smooth. Stir in the fruit cocktail with its juice and mix well. In a separate bowl, combine the flour and bi-carb soda, then fold this dry mixture into the wet ingredients until just combined. Pour the batter into the prepared dish and smooth out the top.
Step 2. Bake the Pudding
- Place the dish into the oven and bake for 45 minutes, until the pudding is set and golden brown on top. Once baked, prick the surface all over with a fork or skewer to help the hot glaze soak through.
Step 3. Prepare the Glaze
- About 10 minutes before the pudding is ready, add the sugar, butter, and cream to a saucepan. Heat gently over medium heat, stirring continuously until the butter is melted and the mixture is bubbling gently. Remove from the heat and stir in the vanilla extract.
Step 4. Finish and Serve
- Pour the hot glaze evenly over the pudding while it’s still warm, allowing it to soak in fully. Let the pudding cool slightly before serving.
- Top with whipped cream, slivered pistachios, and pomegranate seeds for a festive touch. Serve warm or at room temperature.
