Ingredients

  • 2 rolls, sliced diagonally
  • 100g unsalted butter softened
  • 3-4 cloves of garlic, crushed
  • 1 tablespoon fresh parsley chopped
  • salt to taste

  • Use softened butter for easier mixing.
  • Crush or mince garlic finely to ensure an even distribution of flavour.
  • Garlic butter can be stored in the fridge for up to a week.
  • Be generous when spreading garlic butter on the rolls
  • You can use any bread for this recipe
  • if you want to add a little extra kick, you can sprinkle some grated parmesan cheese on top before baking.

Method

Preheat your oven to 180°C 

In a small bowl or mortar and pestle, mix together the softened butter, crushed garlic, chopped parsley, and salt until well combined.

Spread a generous amount of garlic butter on each slice of the rolls. If the rolls break while pasting the garlic butter on, place them back together to reform the rolls, and wrap each one loosely in aluminum foil.

Bake the rolls in the oven for 15-20 minutes, until they are golden brown and crispy.

Serve hot and enjoy!

But for many reasons, the project didn’t go ahead. At the time, I wasn’t prepared for the reality that not everyone would understand or support what I was doing. There were people who gossiped, joked, and made me question myself. Looking back now, I see that they were the minority, but their words had a way of making me doubt myself 🥺

if this happened now—I would not have let anything stop me. This was for a good cause, but I also believe that everything happens for a reason. The project was meant to be set aside, and I needed to focus on my boys, who were still young.
A couple of years later, we received the heartbreaking news of Auntie Suad’s passing 🥲🙏🏽It felt as though a part of the story had been left unfinished. A few weeks later, something arrived in the mail that would bring me to tears 😭 There’s more 🤗
