About this recipe

A friend of mine invited us over for dinner, and she made this easy iceberg cucumber salad. That was it. I came home and started making it at least three times a week in our house. It’s fresh, crisp, and honestly one of the quickest salads you can put together when you need something simple but still full of flavour.

What I love most about this easy iceberg cucumber salad is how effortless it is. You chop, mix, dress, and it’s done. The combination of crunchy lettuce, juicy cucumber, fresh herbs, and salty feta just works. It’s the kind of salad I make when I don’t want to think too much, but I still want something that feels complete on the table.

Ingredients

Main Ingredients

  • 1⁄2 iceberg lettuce, shredded
  • 4 spring onions, finely chopped
  • 2 cucumbers, halved lengthwise, then sliced
  • 1⁄2 cup coriander leaves, firmly packed
  • 1⁄2 cup parsley leaves, firmly packed
  • 100 grams feta, crumbled

Dressing

  • 3 tablespoons olive oil
  • 3 tablespoon lemon juice
  • salt to season

  • I like to keep the lettuce slightly chunky—not too fine, it keeps that crunch
  • Add the dressing just before serving so everything stays fresh
  • I prefer a smooth, creamy feta, but any feta works
  • Taste the dressing and adjust the lemon or salt to your liking

Method

Step 1. Prepare the vegetables

Shred the iceberg lettuce into pieces that are not too thin and not too thick, and place it in a large bowl. Cut the cucumbers in half lengthwise, then slice them into half-moon pieces—not too thick. Add them to the bowl along with the finely chopped spring onions, parsley, and coriander.

 

Step 2. Dress and assemble the salad

Drizzle the olive oil and lemon juice over the salad, then sprinkle in the salt. Toss everything together well so the dressing coats all the vegetables evenly. Transfer to a serving bowl if needed, then crumble the feta cheese over the top just before serving.

A FEW THINGS YOU’LL WANT TO KNOW

Can I use a different dressing?
Yes, you can. But this salad is meant to be fresh and light, so I would keep it simple—olive oil, lemon, and salt really work best here.

I don’t like coriander, what can I use instead?
You can leave it out completely or replace it with mint, or just use more parsley.

What kind of feta should I use?
Any feta works. I personally like the smooth, creamy ones, but crumbly feta is just as good.

Can I use a gourmet lettuce mix?
You can add it in, but I wouldn’t use it on its own. It changes the texture and you lose that classic crunch from the iceberg.

Can I use cos lettuce instead of iceberg?
Yes, cos lettuce works well too. It will give a slightly different texture, but it’s still a great option.
