With a simple mix of garlic, herbs, soy sauce, and vinegar, the marinade soaks right in—no waiting or fussing. Roast them until golden and finish with a rich gravy made from the pan juices.   • ½ teaspoon of paprika
  • 2 tablespoons of white vinegar

  • 2 tablespoons of soy sauce

  • 1 cup of olive oil

  • 3 tablespoons of cornflour
  • 3 tablespoons water for the paste

Method

Step 1: Prep and Season the Chicken

Preheat your oven to 220°C (fan-forced).

Place the chicken drumsticks into a large baking dish in a single layer. Season with salt and black pepper. Add the crushed garlic, the oregano, basil, white pepper, and paprika. Massage the spices and garlic in well so every drumstick is evenly coated with the flavour.

Step 2: Add Liquids and Roast

In a jug, mix together the white vinegar, apple cider vinegar, soy sauce, and water. Pour this mixture evenly over the seasoned drumsticks. Drizzle olive oil over the top and roast uncovered for 50 minutes to 1 hour, or until the chicken drumsticks are golden, crispy on the outside, and fully cooked through.

Step 3: Make the Gravy

Once cooked, carefully pour the pan juices into a small saucepan. In a separate bowl, whisk together 2 tablespoons of cornflour with 2 tablespoons of cold water to form a smooth paste. Add the paste to the saucepan and place it over medium heat. Whisk continuously until the gravy thickens to your liking. If needed, mix an extra tablespoon of cornflour with water and add gradually until the gravy reaches your desired consistency.

Step 4: Serve and Enjoy

Pour the rich, flavourful gravy back over the hot chicken drumsticks. Garnish with parsley if you like, and serve with a big spoonful of creamy mashed potato. Perfect for soaking up all that delicious sauce.

A FEW THINGS YOU’LL WANT TO KNOW

What kind of baking dish should I use?
This is important—use a good-quality oven dish that holds heat well, like ceramic or heavy-duty metal. But don’t go for something too big. The drumsticks should sit snugly together. If the pan is too large, the juices will spread out and evaporate quickly. Trust me, I’ve tested it—you’ll end up with dry chicken and no sauce to work with.

What if I only have small drumsticks?
If your drumsticks are on the smaller side, you might want to add a few more to the dish to keep the balance of the recipe right. No need to adjust the marinade quantities—the flavour still works beautifully.

Can I use a different oil?
Yes, you can use vegetable or seed oil if that’s what you have on hand. I personally prefer olive oil for its flavour and because I try to avoid seed oils, but it’s flexible.

Can I use other cuts of chicken?
Absolutely. Go for cuts with the bone in—like chicken chops because that’s where a lot of the flavour comes from. Just keep an eye on cooking times depending on the size and thickness.

What should I serve it with?
This dish is versatile. You can serve it with mashed potato (my favourite), bread to mop up that gravy, rice, or even a fresh salad. If you’re skipping carbs, it’s just as tasty on its own.

Is it gluten-free?
It can be! Just make sure to use gluten-free soy sauce and double check that your cornflour is certified gluten-free. Everything else in the recipe is naturally gluten-free.

Can I prep it ahead of time?
Yes! You can season the drumsticks with the garlic and dry spices earlier in the day or even the night before. Just don’t pour over the wet mixture until you’re ready to bake—it’s quite acidic and could affect the texture of the chicken if it sits too long. You can prep your vinegar and soy sauce mix in a jug and keep it ready in the fridge to pour over when it’s time to cook.

What can I do with the leftovers?
So easy—just pull the meat off the bone and toss it through rice, pasta, or even stuff it into a wrap with some salad. You can also use it in a grain bowl or shred it over a baked potato with a little of that leftover gravy. It honestly makes the best second-day meal.
