Step 1.
In a large bowl, combine the cubed mango, cubed cucumber, and chopped mint leaves.
In a small bowl, whisk together the plain yogurt and honey until smooth. Pour the yogurt honey dressing over the mango and cucumber salad.
Heat a dry frying pan over medium heat. Add the raw pine nuts and toast them for 2-3 minutes until lightly golden. Keep an eye on them as they can burn easily. Remove the toasted pine nuts from the heat and sprinkle them over the salad.
