  • 4 thick slices of sourdough bread
  • 2 cloves of garlic, peeled and halved
  • 4 ripe tomatoes, diced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh basil, chopped
  • 1 spring onion, finely chopped
  • salt to season
  • 2-3 tablespoons olive oil, plus extra for drizzling
  • Fresh basil leaves, for garnish

  • For the tastiest bruschetta, use tomatoes that are ripe and juicy. Trust me, it makes all the difference!
  • Tomatoes are bursting with flavour when they’re served at room temperature. Don’t believe me? Give it a try and you’ll see!
  • Get a nice, smoky flavour by charring your sourdough bread on a grill or in a pan.
  • Rub some fresh garlic onto the warm bread to add a delicious savoury kick.
  • Top off your bruschetta with a few fresh basil leaves and a drizzle of olive oil. So simple! yet so delicious!


Step 1.

Preheat a grill or grill pan to medium-high heat.

Brush both sides of the sourdough slices with olive oil and grill until charred on both sides. Rub one side of each slice with a cut garlic clove.


Step 2.

In a bowl, combine the diced tomatoes, chopped parsley, chopped basil, chopped spring onion, salt, and olive oil. Spoon the tomato mixture on top of the grilled bread slices. Garnish with fresh basil leaves and a drizzle of olive oil. Serve immediately!
