About this recipe

This roasted pumpkin couscous salad came about one afternoon when my sister-in-law and I were having coffee, both laughing about how we’d seen a dozen versions of roasted salads online that week. She had her eye on one, and I had mine on another, so we decided to merge our ideas into this easy, one- tray version. It’s wholesome, full of texture, and the kind of dish that makes a casual dinner feel special without trying too hard.

I love how the pumpkin softens in the oven while the chickpeas get that light crisp. The trick is to cut the onions a little thick, so they don’t melt away, and keep the pumpkin pieces just right—not too small that they mash, not too big that they take forever to cook. Everything roasts together, saving dishes and keeping the flavours simple.

It’s a perfect salad for entertaining, barbecues, or even next-day lunch straight from the fridge.

Main Ingredients

  • 750 grams pumpkin (about 1⁄2 pumpkin)
  • 2 red onions
  • Pinch of white pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon sweet paprika
  • 1⁄4 cup olive oil
  • Salt, to taste
  • 1 can chickpeas, drained and rinsed
  • 1 cup pearl couscous
  • Handful of baby spinach

For the dressing

  • 6 tablespoons lemon juice
  • 3 tablespoons olive oil
  • 1 teaspoon sumac
  • 1⁄2 teaspoon dried parsley

Method

Step 1. Roast the pumpkin and chickpeas

Preheat the oven to 190°C (375°F) fan-forced. Cut the pumpkin into chunks and slice the red onions. Place them on a large baking tray with the drained chickpeas. Drizzle with olive oil, then add cumin, paprika, white pepper, and salt. Toss everything together until well coated. Roast for 30 minutes, turning halfway through, until the pumpkin is soft.

 

 

Step 2. Cook the couscous

While the vegetables roast, cook the pearl couscous according to the packet instructions until tender. Drain well, and set aside. In a small bowl, whisk together the lemon juice, olive oil, sumac, and dried parsley to make the dressing.

Step 3. Assemble the salad

Once the roasted vegetables come out of the oven, add the baby spinach to the warm tray or you can do this in a bowl and gently toss it through so the leaves wilt slightly. Add the cooked couscous, and pour over the dressing. Toss well to coat and serve warm or at room temperature.

A FEW THINGS YOU’LL WANT TO KNOW

Can I skip roasting the chickpeas?
You can. If you like them soft, toss them through a frying pan instead. Roasting just gives them that extra crisp texture.

What if my pumpkin turns mushy?
That usually means the chunks were too small or over-roasted. Aim for medium pieces—around 3 cm—and check them at 25 minutes.

Can I make it ahead?
Yes! This salad keeps well for a day or two in the fridge. 

What dressing works best?
Any fresh, light dressing with lemon or vinegar works well. The one here is zesty and simple—it balances the hearty vegetables perfectly.

Why is the spinach added at the end?
Because if you add it too early, it’ll wilt down to almost nothing. The idea is to toss it through while the vegetables are still warm—just enough heat to soften the leaves slightly without losing them altogether. You can also use rocket instead for a peppery twist.
