This ruz with lahme recipe is a simplified version of the traditional Ruz with Chicken, where stock is made, used to cook the rice, and the chicken is shredded. While the traditional Ruz with Chicken is a festive dinner party treat, I love how my mother-in-law has simplified it, making it quick yet still delicious. Similarly, if you’re a fan of rice dishes, you’ll also enjoy Ruz with Lahme – Lamb and Rice. This popular dish is perfect for roasts, barbecues, and family gatherings, impressing guests with its rich flavours and beautiful presentation.
Ruz with Lahme is a hit with both young and old, so there’s no need to prepare a separate dish for the kids. It even makes a great school lunch the next day. This dish is one of my mother-in-law’s signatures; she makes it so well that her guests always come back for more. For a vegetarian twist, my chickpea and eggplant rice pilaf is a must-try. Serve these rice dishes with a super herb salad, natural yogurt, or enjoy them as they are for a complete and satisfying meal.
Step 1.
Wash the rice under cold water. Set aside.
Add olive oil to a non-stick pot and fry the pine nuts until golden brown. Remove the nuts and drain on paper towels leaving oil in the pot. Repeat the same process with almonds. The almonds can be drained together with the pine nuts.
Step 2.
Using the same oil, saute the onion until translucent. Add the mince and sauté, breaking up the meat till it’s fine. Once the meat is brown and cooked but still moist, add the rice and mix in the Arabian spice and vegeta or salt. Stir well.
Step 3.
Add boiling water, lower the heat to a simmer and cover the pot with a lid. After 7 minutes stir the rice. Again, after another 7 minutes give the rice another stir, making sure you stir the rice from the bottom to the top. Cook for a further 5-7 minutes or until the rice is cooked. Garnish with golden almonds and pine nuts. Pomegranates can add beautiful colour to this dish if they’re in season.
