On a holiday to Robe in South Australia, I came across a small breakfast spot serving the most irresistible avocado smash. It was trending at the time, and I knew I had to recreate it at home. While they crumbled Greek feta on top, I decided to take it up a notch by using Persian feta, which adds a creamier, richer touch. The combination of the avocado smash with dukkah is simply unforgettable, and the charred sourdough brings it all together.

Char the sourdough and prepare the toppings:
Lightly brush both sides of the sourdough slices with olive oil and heat a grill pan or skillet over medium-high heat. Once hot, place the bread on the pan and char for 2-3 minutes per side, until golden and crisp.
Meanwhile, cut the avocado in half, remove the seed, and scoop the flesh into a bowl. Roughly mash the avocado, leaving some texture, and season with salt and pepper. Slice the tomato thinly and set aside.
Assemble and serve:
Lay the tomato slices over the charred sourdough, followed by the mashed avocado spread evenly on top. Crumble the Persian feta over the avocado, then generously sprinkle with dukkah. Finish with a drizzle of olive oil.
