I’ve always loved toasted cheese sandwiches, but there is nothing like my son’s crispy and gooey delicious toasted grilled cheese sandwich recipe. This one is super special—made in a griddle pan with lots of love. He has spent many hours and days trying to perfect the toastie, and hands down, he has done a great job. But if you’re here because you love cheese, you really need to make these easy 3 cheese sesame savoury muffins.

Traditional sliced bread or artisan textured bread?

According to him, you will only achieve crispy toasties if you use the right bread; using traditional sliced bread will definitely not achieve this. Use only bread with a texture like sourdough, ciabatta, etc. Remember, the slices should not be too thin or too thick. Too thin and it will only taste cheese and too thick means it will be difficult to melt the cheese and you will over-toast the bread.

How to cook your toasted grilled cheese sandwich- Griddle, frying pan, or press down toaster?

Laith has used and tested them all—the best way to achieve a perfectly crisped toasted sandwich is using a griddle pan. I personally have used a frying pan and it works well too. The only difference is frying pans do not mark the toasties with those lines we love to see.

Ingredients

  • 4 tablespoon olive oil
  • 1 tablespoon truffle oil (optional)
  • 2 slices of ciabatta bread or sourdough
  • 2 slices cheddar cheese
  • Salt and pepper to season

  • Here’s another delicious version of this toastie that you can try: add Bresaola, brush with combined 4 tablespoon olive oil and 1 tablespoon truffle oil and finish with grated Parmesan cheese.
  • I love using a quality baked sourdough bread when making toasted sandwiches

Method

Step 1.

Preheat the griddle pan over medium heat. Mix truffle oil (optional) and olive oil together.

Step 2.

Put the cheese slices on one of the slices of bread and top with the other slice. Season with salt and pepper.

Step 3.

Generously brush the oil on one side of the bread and place vertically on the griddle pan, oil side down. Brush the rest of the oil on the non-oiled side.

Step 4.

Cook for 2-3 minutes until lightly golden and flip over. Again cook for 2-3 minutes. Flip the toastie over once more but place it horizontally on the griddle pan to achieve those beautiful lines. Cook for a further 2 minutes or until golden and crispy. Turn over and repeat.

A couple of years later, we received the heartbreaking news of Auntie Suad’s passing 🥲🙏🏽It felt as though a part of the story had been left unfinished. A few weeks later, something arrived in the mail that would bring me to tears 😭 There’s more 🤗
