Ingredients

  • 2 cups pineapple, cubed
  • 5 cm piece of ginger
  • 2 medium apple (cored, chunked)
  • 1 small Lebanese cucumber (sliced)
  • 16-20 mint leaves
  • Lemon or lime juice (optional)
  • 2 cup water or sparkling water
  • Ice cubes (optional)

  • When preparing for a large group, make the drink in batches to ensure consistency and to manage blender or juicer capacity
  • Use ripe pineapples for the best flavour.
  • Choose apples that are more on the sweet side, like fuji to complement the other flavours.
  • straining is an important step to ensure a smooth drink. A fine-mesh sieve works best.

Method

Step 1. Blend

In a blender, combine the pineapple, ginger, apples, cucumber, mint leaves, and 1 cup of water or sparkling water. Depending on your blender's size, you may still need to do this in batches to ensure everything blends smoothly.

Step 2. Strain

Pour the blended mixture through a sieve into a large jug or pitcher to remove the pulp, pressing gently to extract as much liquid as possible.

Step 3. Flavour Adjustments and Serve

Optionally, add lemon or lime juice to the strained juice according to your taste preferences.

Add the remaining cup of water or sparkling water to the jug and stir well. Serve the drink over ice in individual glasses.
