Step 1.
Blend red bird's-eye chilies, garlic, red bell pepper, lemon zest and juice, orange zest and juice, sweet paprika, dried oregano, a pinch of ground black pepper, red wine vinegar, olive oil, and salt until smooth.
Add the chopped coriander and red onion to the blender. Pulse to mix, maintaining some texture.
Before marinating, set aside ¼ cup of the marinade and mix it with 1 tablespoon of Greek yogurt for a creamy drizzle after cooking.
Step 2.
Place chicken in a bowl. Pour marinade over, ensuring thorough coating. Marinate in the fridge for at least 1 hour, better overnight.
Preheat the oven to 200°C and bake in a roasting pan for about 35-40 minutes, or until fully cooked.
If you're using an air fryer, Set it to 180°C. Arrange the marinated chicken in a single layer in the basket, ensuring they’re not overcrowded. Air fry for approximately 30-40 minutes, flipping halfway through, until golden and cooked through. The result? Juicy, flavourful Peri Peri Chicken with a perfectly crisped exterior!
