About this recipe

This zucchini and tuna salad is healthy and quite simple to make. Quinoa, which is a great substitute for cracked wheat in tabouli, gives this salad a subtle flavour and a fluffy and slightly crunchy texture.

The zucchini paired with tuna and finished with a lemon and oil dressing is the perfect summer salad recipe. Also, since this tuna zucchini salad is so rustic, you don’t have to worry if you have less or more of certain ingredients.

I love to also add tuna to my sumac herb salad. The crunchy pine nuts and fried bread tossed with roasted tomatoes pair perfectly with tuna. I really recommend you give it a go sometime.

Ingredients

Main Ingredients

  • 1 cup white quinoa
  • 2 zucchini (medium size)
  • 1 cup coriander leaves
  • 1 cup parsley leaves
  • 1 avocado
  • 1 small red onion
  • 2 handful rocket
  • 2-3 cans tuna (185 gram each can)
  • 3 tablespoons almonds slivered
  • chèvre cheese (optional) but I think you should!

Dressing

  • 6 tablespoon olive oil
  • 6 tablespoons lemon juice
  • salt and pepper

Notes from Rouba

  • You can easily make this without quinoa by adding lettuce.

Method

Step 1.

Add 2 cups of water to the rinsed quinoa and bring to a boil in a saucepan. Reduce the heat, cover, and simmer until the quinoa has absorbed all of the water (approximately 15 min). Remove from heat and rest covered for a few minutes. Set aside to cool.

Step 2.

Heat 1 tablespoon olive oil in a small frying pan, add almonds stirring until golden in colour and toasted through. Using a slotted spoon, transfer to paper towels. Set aside. Thinly cut the zucchini into matchsticks, dice the avocado, thinly slice the red onion, and shred the tuna if need be.

Step 3.

Combine all salad ingredients in a bowl. Place the ingredients for the dressing in a jar, season with salt, and shake well. Pour the dressing over the salad and toss.
