These melt-in-the-mouth anchovy soldiers are a delicious starter or snack. Here the anchovy is balanced with the smooth sweetness of the tomato.
These incredibly easy toasts topped with tomato paste, good quality anchovy fillets, capers, and red onion are the perfect hors-d’oeuvres.
Drizzle the bread with olive oil. Toast or griddle the sourdough on both sides.
Lightly spread tomato paste on one side of the bread, followed by two anchovy fillets. Top with capers, red onion and garnish with mint.
Serve while the toast is still crisp.
