This zucchini and tuna salad is healthy and quite simple to make. Quinoa, which is a great substitute for cracked wheat in tabouli, gives this salad a subtle flavour and a fluffy and slightly crunchy texture.
The zucchini paired with tuna and finished with a lemon and oil dressing is the perfect summer salad recipe. Also, since this tuna zucchini salad is so rustic, you don’t have to worry if you have less or more of certain ingredients.
I love to also add tuna to my sumac herb salad. The crunchy pine nuts and fried bread tossed with roasted tomatoes pair perfectly with tuna. I really recommend you give it a go sometime.
