Burgers have been a staple of Western diets for decades, with everyone from fast food chains to gourmet chefs putting their own spin on this much-loved dish. 1. Ultimate DIY Beef Burgers

We’re starting with a classic, but elevating it with one simple twist: Scotch fillet. If you’re ready to create a beef burger with exceptional flavour, this one’s for you. Juicy, tender, and full of rich taste, the Scotch fillet transforms a humble homemade burger into something gourmet. I love serving it with lettuce, tomato, mayonnaise, and pickled gherkin turnips.

Here’s a clever and creative tip: find a trusted family butcher—many offer great prices and will happily mince a Scotch fillet log for you. I can buy it for as low as $25 a kilo in Australia, and it makes all the difference. Big flavour, minimal effort.

2. Kafta Burgers

My kafta burger is a Middle Eastern favourite—packed with herbs, spices, and so much flavour. Made from a blend of ground beef or lamb, onion, parsley, and spices like cinnamon and allspice, it’s a delicious twist on the standard burger. Serve it in a soft bun or even pita bread, layered with hummus, fresh tomato, pickled red onion, and mint leaves.

A drizzle of tahini or tzatziki adds a creamy element that complements the spices beautifully. This is a burger with character, deeply rooted in Middle Eastern tradition and easy to customise to your taste.

3. Tuna Bagel/Burger with White Bean Mash

This is not your average tuna sandwich. This recipe came together as a bit of a team effort—my mother-in-law created the creamy white bean mash, I added the tuna, and my husband suggested the condiments that brought it all together. As we say in our home, “many hands make light (and tasty) work!”

The mash is made with canned white beans, olive oil, garlic, and lemon juice—simple and full of flavour. Spread it on a toasted bagel, then top it with tuna, rocket, and a touch of hot chilli sauce. You can also add sliced avocado or cucumber for extra crunch and healthy fats. It’s quick, fresh, and full of goodness. For a lighter version, swap the bagel for wholemeal bread or a lettuce wrap.

 

4. Lamb Burgers

Our lamb burgers are a rich, satisfying option—perfect for using up leftover roast lamb or making from fresh mince. These burgers work beautifully with creamy goat cheese or feta, caramelised onions, and a dollop of harissa or mint yoghurt. Serve them on soft, high-quality buns with rocket or baby spinach for a burst of freshness.

Don’t be afraid to experiment with roasted red peppers or herbs like coriander and parsley to add another layer of flavour. This burger is a great example of turning leftovers into something exciting and new.

5. Musakhan Chicken Burgers

If you’ve ever had Musakhan—sumac-spiced chicken with sweet caramelised onions—you’ll know why this burger had to be on the list. It’s made using leftover Musakhan or even store-bought charcoal chicken, mixed with onions, sumac, and olive oil. I like to serve it in a soft roll, but for a gluten-free option, it also works beautifully on a crisp lettuce leaf.

Top it with toasted pine nuts and a sprinkle of parsley, or go bold with a few pomegranate seeds for a pop of sweetness. This is Middle Eastern comfort food with a burger twist.

Who doesn’t love a good schnitzel? This burger features homemade chicken schnitzels, crumbed and fried until golden, then layered into a bun with lettuce, tomato, avocado, and a generous swipe of mayonnaise and hot chilli sauce.

Make sure your schnitzel is seasoned generously before crumbing—that’s the key to deep flavour. This burger is all about crunch, spice, and juicy chicken, made even better with those classic toppings.

These vegetarian burgers are a favourite of mine—especially when I want something satisfying without the meat. The combination of grilled eggplant and salty halloumi is unbeatable. That’s me at the age of 32 with Merlin, who worked closely with Palestinian families. Together, we were so excited about the project. After that unforgettable visit with Auntie Suad, I was filled with excitement about the project. The women I met were inspiring, and together we had even come up with a name for the cookbook: Taste of Palestine. 🥰🇵🇸 It was a name that captured the heart of what we wanted to share—stories, recipes, and traditions tied to the land and its people.

But for many reasons, the project didn’t go ahead. At the time, I wasn’t prepared for the reality that not everyone would understand or support what I was doing. There were people who gossiped, joked, and made me question myself. Looking back now, I see that they were the minority, but their words had a way of making me doubt myself 🥺

if this happened now—I would not have let anything stop me. This was for a good cause, but I also believe that everything happens for a reason. The project was meant to be set aside, and I needed to focus on my boys, who were still young.
A couple of years later, we received the heartbreaking news of Auntie Suad’s passing 🥲🙏🏽It felt as though a part of the story had been left unfinished. A few weeks later, something arrived in the mail that would bring me to tears 😭 There’s more 🤗
