This Zaatar and Cheese Loaf is a savoury delight that’s perfect for breakfast or an afternoon snack. With the rich, earthy flavour of za’atar combined with the creaminess of cheese, this loaf is sure to impress your family and friends. And the best part? You can have it baking in just 15 minutes! This recipe was inspired by the 3 Cheese Muffins, a recipe given to me by a friend. Of course, as you all know, I had to put my Middle Eastern twist on it, and there’s nothing better than zaatar and cheese.

If you’re looking for variations, this zaatar and cheese loaf can easily be made into muffins, just like my original 3 Cheese Muffins, which are perfect for lunchboxes. But I must say, there’s something special about baking it into a loaf that’s great for sharing. For those with a sweet tooth, my Easy Raspberry and Chocolate Cupcakes offer the perfect balance of sweet and tangy in every bite—a simple recipe that’s sure to please. Whether you stick with the loaf or try the muffins, this recipe is versatile and delicious, making it a fantastic addition to your baking repertoire.

Ingredients

  • 4 eggs
  • ⅓ cup canola oil
  • ⅓ cup olive oil
  • 25 grams melted butter
  • 3/4 cup yogurt
  • 300 grams feta crumbled
  • 100 grams haloumi cheese diced
  • ½ cup mint leaves shredded
  • ¼ cup chives chopped
  • 1 tablespoon za’atar
  • ½ teaspoon black pepper
  • 1 tablespoon chia seeds
  • 1 teaspoon dry mint
  • ¼ teaspoon chili flakes
  • 2 ½ cups self raising flour sifted
  • 1 teaspoon baking powder
  • 1 tablespoon of white and black sesame seeds combined

Notes from Rouba

  • This dish is meant to be rustic, do not flatten the mixture once poured into the tin Using white and black sesame seeds is visually appealing. You can use any baking tray available to you. 
  • Along with this tasty recipe, I have to share the baking dish that I think perfect to use for this Cheesy Zaatar loaf. Although this dish will work with any baking tray, the Nordic Ware Loaf Pan, with 6 cup capacity really elevates the presentation of the dish, and can be used for a range of other recipes as well!

Method

Step 1.

Pre-heat oven to 180° degrees.
Grease a 28 x 16 cm baking dish and sprinkle with 1/2 of the combined white and black sesame seeds. Set aside.

Step 2.

To make the mixture, beat the eggs well using a hand whisk. Add all the ingredients except the flour and baking powder. Mix well with a spoon.

Step 3.

Once well combined, fold through the sifted flour and baking powder. Pour mixture into prepared tin (see notes from Rouba). Sprinkle with remaining sesame seeds. Rest for ten minutes.

Step 4.

Bake in pre-heated oven for approximately 20 minutes or until cooked through.

But for many reasons, the project didn’t go ahead. At the time, I wasn’t prepared for the reality that not everyone would understand or support what I was doing. There were people who gossiped, joked, and made me question myself. Looking back now, I see that they were the minority, but their words had a way of making me doubt myself 🥺

if this happened now—I would not have let anything stop me. This was for a good cause, but I also believe that everything happens for a reason. The project was meant to be set aside, and I needed to focus on my boys, who were still young.
A couple of years later, we received the heartbreaking news of Auntie Suad’s passing 🥲🙏🏽It felt as though a part of the story had been left unfinished. A few weeks later, something arrived in the mail that would bring me to tears 😭 There’s more 🤗
