These delicious crispy cauliflower snacks are full of antioxidants and fibre and are the easiest side dish you can possibly prepare.

All you need to make mouthwatering crispy cauliflower is good quality olive oil and salt. This side dish recipe is my go-to garnish for my cauliflower and celery soup.

You can enhance the flavour by getting creative and adding other ingredients such as garlic, spice and herbs. I, however, love the simplicity of this recipe. Also, if you find multi-coloured cauliflower, go ahead and use it. Nothing impresses guests and convinces your kids to eat their veggies like a colourful meal.

Ingredients

  • ½ cauliflower cut into small-size florets
  • 1-2 teaspoons olive oil
  • salt to season

Notes from Rouba

  • For a crispy result, you only want to lightly coat these with oil.
  • Toss the cauliflower florets in a large bowl to ensure that the oil and seasoning are equally distributed among the cauliflower florets.
  • Spread cauliflower evenly on the pan. If the vegetables are crowded, they will not cook or caramelise evenly.

Method

Step 1.

Preheat the oven to 170° degrees. Line an oven tray with baking paper. Toss the cauliflower with olive oil until lightly and evenly coated. Sprinkle with salt. Arrange the cauliflower in a single layer.

Step 2.

Bake for approximately 25 to 35 minutes until the cauliflower is crispy and golden in colour.
