Ingredients

  • 1 kg (about 4 cups) unroasted peanuts, with skin
  • 5 tablespoons table salt (adjust to taste)

  • Watch closely: Keep an eye on the peanuts, especially towards the end of roasting to prevent over-browning or burning. Ovens may vary.
  • Cooling: Let the peanuts cool completely before storing, as they will continue to crisp up as they cool.
  • Storing: Store in an airtight container to keep them crunchy. 
  • Use as an ingredient: These roasted peanuts can be used in various recipes such as salads, stir-fries or even ground up for homemade peanut butter. Simply remove the outer skin.
  • Raw Peanuts with Skin

Method

Preheat your oven to 160 degrees Celsius (320 degrees Fahrenheit). 

Rinse the peanuts: Place the unroasted peanuts in a colander and rinse them under cool water to remove any excess dirt. This will also help the salt to adhere better to the peanuts.

Sprinkle the salt over the peanuts and toss them well, ensuring they are evenly coated with salt. Feel free to adjust the amount of salt to your taste.

Spread the peanuts in a single layer on a large roasting or baking tray. Ensure they are spread out evenly so they cook uniformly. Place the tray in the preheated oven and roast the peanuts for 25-30 minutes. Halfway through the roasting time (around 12-15 minutes), remove the tray from the oven and give the peanuts a good stir or toss to ensure even roasting.

Once the peanuts are slightly golden brown remove them from the oven and allow them to cool on the tray for at least 10-15 minutes. This will help them to crisp up as they cool.

That’s me at the age of 32 with Merlin, who worked closely with Palestinian families. Together, we were so excited about the project. After that unforgettable visit with Auntie Suad, I was filled with excitement about the project. The women I met were inspiring, and together we had even come up with a name for the cookbook: Taste of Palestine. 🥰🇵🇸 It was a name that captured the heart of what we wanted to share—stories, recipes, and traditions tied to the land and its people.

But for many reasons, the project didn’t go ahead. At the time, I wasn’t prepared for the reality that not everyone would understand or support what I was doing. There were people who gossiped, joked, and made me question myself. Looking back now, I see that they were the minority, but their words had a way of making me doubt myself 🥺

if this happened now—I would not have let anything stop me. This was for a good cause, but I also believe that everything happens for a reason. The project was meant to be set aside, and I needed to focus on my boys, who were still young.
A couple of years later, we received the heartbreaking news of Auntie Suad’s passing 🥲🙏🏽It felt as though a part of the story had been left unfinished. A few weeks later, something arrived in the mail that would bring me to tears 😭 There’s more 🤗
