Ingredients

  • 32 small cooked prawns, ready to eat
  • 4 cloves of garlic, finely crushed
  • 5-6 tablespoons lemon juice
  • 6 tablespoons olive oil
  • ¼ cup very finely chopped parsley
  • Salt and pepper to taste
  • 8 skewers (wooden or metal)

Notes from Rouba

  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • If using frozen prawns, ensure they are completely thawed and patted dry to avoid wateriness.

Method

Step 1.

Prepare the Prawns: Thaw the prawns if frozen and pat dry with paper towels.

Make the Marinade: In a bowl, combine the minced garlic, lemon juice, olive oil, and chopped parsley. Whisk well. Season with salt and pepper.

 

Step 2.

Skewer the Prawns: Place four prawns onto each skewer. Soak wooden skewers in water for 30 minutes beforehand if using.

Marinate the Prawns: Place the skewers in a flat dish. Pour the marinade over the prawns, ensuring they are evenly coated. Let them marinate for 10-15 minutes.

 

Step 3.

Cook the Prawns: Preheat a fry pan or grill pan over medium-high heat. Place the prawn skewers on the pan. Grill them for about 2 minutes on each side, ensuring they are heated through and develop grill marks. As they cook, brush the remaining marinade from the dish over the skewers to infuse extra flavour and moisture.
